Fermentation and maceration This is the process where the sugars in the grape must are converted into alcohol. The duration is variable and depends on the temperature and amount of sugar but is generally between 4 to 6 days. Maceration occurs simultaneously and the time and colour intensity depends on the type of wine we want to produce.
